USDA's Food Safety and Inspection Service has amended FSIS Directive 7120.1, reports Meat and Poultry. The amendment identifies substances approved for use in meat and poultry products as food additives; approved in generally recognised as safe (GRAS) notices and pre-market notifications; and approved in letters conveying acceptability determinations.

The list covers organic acids, trisodium phosphate, chlorine dioxide and hydrogen peroxide, and describes when they may be used in a range of different meat products.
