Meat Industry Show Starts in Mexico City

MEXICO - The international symposium, SICARNE, which started in Mexico City yesterday, 23 October, promises to offer a window on innovation and trade liberalisation.

SICARNE Mexico will take place in the city of Aguascalientes from 23 to 25 October, with the participation of 1,500 farmers from different states of Mexico and 900 professionals and specialists in the meat industry not only from Mexico but also Cuba, Costa Rica, United States, Guatemala, Canada, Uruguay, Argentina and Haiti, among others.

It will have display areas for machinery, equipment and supplies for the meat industry, vacuum packers, slaughterhouses and farms equipment, refrigeration equipment, stainless steel sanitary high-tech transportation, among others.

The event will include a Sausage School for making sausage (salami, ham, pepperoni, sausage and smoked) and a School of Butchers for theoretical and practical workshops on meat cuts, cutting, deboning and cutting in European, American and Argentine styles.

With the participation of Mexico and countries of the continent will be the International Symposium on Beef Cattle Production, SICARNE, which seeks to update knowledge, technological exchange and applied research to make this sector more productive, competitive and sustainable, reports Mexico's Secretariat of Agriculture, Livestock, Rural Development, Fisheries and Food (SAGARPA).

This meeting will bring together specialists livestock in the control and management of pigs, poultry, cattle, goats and sheep. The expo also features a dining area, where attendees will have the opportunity to taste and grilled cuts, prepared by experts and the best prices in the market.

For the first time, poultry farmers have a stake in this forum with the aim of strengthening the work of the producers by updating and sharing experiences to improve the quality of their processes and promote products made with chicken meat.

Parallel to the event, 24 October will be celebrated as the Day of the Hog Farmer, offering an academic programme and auction of high genetic-quality boars.

SICARNE is an event that will allow cattle producers across the country and Latin American nations update their knowledge through lectures and workshops given by experts on topics such as health, safety, traceability and export niches.
